| 50g plain flour, plus alot more to add to the dough 2 tbs baking powder 40g sugar, plus some to sprinkle on top with cinnamon 1/4 teaspoon salt 5 tbs veg oil 195ml soy milk 2 tsp vinegar Preheat oven to 200/ gas 6 Sift flour, baking powder, sugar and salt into a mixing bowl. Add
oil, soy cream, rice milk and vinegar to a bowl and stir until mixed.
Combine and mix, adding flour as you go until dough forms that is not
sticky and clumpy.
Divide into 10 pieces with your hands and roll into a ball, put on greased baking sheet, pat down a little bit and sprinkle with a little sugar/cinnamon and bake for 12-15 minutes. Add berries (175g) if desired! Blueberries were amazing, also raisins too. To stop them falling just dust them with a little flour after washing them
Yummy! *** *** *** *** *** *** *** *** *** *** *** *** *** *** *** *** *** Chewy Chocolate Cookies (From Merideth) ¾ cups vegetable oil 2 cups sugar of your choice 2 tsp vanilla 1 tbsp flax seeds (linseeds) ½ cups soya milk 2 cups unbleached flour ¾ cups cocoa 1 tsp baking powder ½ tsp salt 1 cup chocolate chips (or ½ raisins and ½ chips, or all raisins) Preheat overn to gasmark 5/375F/190C. Grind flax in a coffee grinder, or blend them with the soya milk in a blender or with a hand blender. Set aside. Sift together flour, cocoa, baking powder and salt. In another bowl, cream together the sugar and oil. Add flax/milk mixture and mix well. Add Vanilla. Fold dry ingredients into wet until a stiff dough forms. Add chocolate chips/raising and knead in with hands. Use (slightly wet) hands to roll dough into 1 inch balls and flatten them down onto an ungreased baking sheet. Bake for 10 minutes and then cool for a satisfying chew like nothing you have had before! |
